This past weekend James and I went to a wedding that was out of town and I packed all of my running gear so I wouldn’t miss out on my long run. Well I packed everything but my running shoes which are only slightly more important than my head band. Dof.
Oh well. But I wore some really pretty high heels from Ann Taylor that are so comfortable for the first three hours you wear them but then turn into torturous footwear in no time. The wedding was on Saturday and its been three days and my feet are still sore. I rubbed my toes raw. I’m relaxing my toes and I’m going to throw those shoes away (maybe).
The other day I bought about 6 super green bananas. I hate super green bananas because they taste like raw tree. The bananas were hanging in their little banana tree and out of nowhere, we had about 4 bananas covered in brown spots. What the heck?! I just bought those things! I also just opened a huge Costco container of Greek yogurt and needed a way to use it up in a few days. The muffin batter was super thick and I was worried I over-mixed it. I under guessed myself on the amount of cinnamon to use so I added a 3:1 ratio of sugar and cinnamon on top of the raw batter.
“Don’t Cry Over Browned Bananas” Muffin Recipe
12 servings 119 calories, 4 grams protein, 1 gram fat (according to SparkPeople)
1.5 cups flour
.5 cups oats
1.5 tsp baking powder
.5 tsp baking soda
.25 cups sugar
1 cup mashed bananas (about 2)
.75 cups Greek yogurt
.25 cups sweetened applesauce
1 tsp vanilla
Mix dry ingredients together. Mix together bananas, yogurt, applesauce, vanilla and egg. Combine together and bake 400 degrees for 20 minutes.
These tasted AMAZING!
It has been quite the Sunday. I don’t know if it qualifies as a Lazy Sunday since James and I both ran 6.55 miles today. That’s right. We completed The Emerald City Quarter Marathon! Woo hoo! The race was great and really well organized when it broke off for the half and quarter marathon runners. I didn’t use the porta potty but it didn’t seem like there were long lines for potties or Gatorade. The scenery was nice as we ran through the park but there were squished frogs everywhere. It was so gross and reminded me of the time I refused to dissect a frog in ninth grade Science class. I saw intestines. Blech.
Before the race, I woke up at 5:00am to take Penny and and get a glass of water. Penny went on strike at that very moment and refused to go outside. She looked at me like I was crazy. She was a very tire puppy and wanted me to finish what I was doing so we could get back to bed. I reset my alarm to go off at 5:40am and James and I got up and each ate a banana with almond butter and a piece of toast (I had mine with Trader Joe’s mango butter).
After getting dressed and figuring out where we need to go (which I know we should have done last night) we high tailed it to the start of the race, along with the 55 other cars trying to get off the exit. Yikes. We had four minutes to park and make it to the start line on time. But we made it, with 33 seconds to spare.
I’m not sure of the exact time it took us to run since I didn’t have my Garmin working. James said it was 1:22 which is almost a 13 minute mile. Its definitely not the greatest but I’m just so glad to run it with James. We stuck together the whole time, side by side, except when James was blowing his nose. We kissed for the camera and held hands across the finish line. Oooooh.
James is in the middle of a two hour nap and I’ve been eating like I just completed a full triathlon. I need to step away from the kitchen. But I can’t right now since I’m making Salted Caramel Ice Cream from Food Finery. I’ve never made homemade ice cream before but the process seems to take forever.
Any month is off to a great start when it begins with a three day weekend. Here are my goals for September:
Run. Just freaking run. I want to at least run three times per week in September.
Spend less money. No more crazy household purchases. Must. Pinch. Pennies.
Waste less food. I imagine the only way to do this is to meal plan. And I know that meal planning will also help us spend less money.
More yoga. It doesn’t have to be 45 minutes of yoga. I don’t have to pull out my fancy yoga mat. My goal is to stretch and breathe my way to calm through September.
Continue wedding planning. Not too much more to do in this department but I still need to keep my mind on it!
Cash in on Groupons. I’m notorious for buying Groupons and sitting on them until they are ready to expire.
Make chili. This one is for James. He’s been patiently waiting for it since winter and its almost seasonally appropriate.
Get a professional massage. I have a gift card and I deserve it!
